3 Ingredient Cookies for Breakfast?

Yesterday, I took the day off from technology and I must say it was glorious.  I went home to my parent’s for the weekend to celebrate my step-dad’s birthday.  Saturday was the most beautiful day and Kyle and I only wanted to spend it outside.  After a quick run to the grocery to pick up food to make dinner Saturday night, we spent the rest of the day playing tennis and enjoying the weather.  We even got a nice 4 miles run in, but I had a terrible cramp and felt pretty queasy for a while. Oh well.

And now, a delicious cookie recipe with granola- that means you can eat them for breakfast right?

3 Ingredient Cookies

Ingredients

2 cups granola (I used Love Grown)

1 cup chocolate peanut butter (or you could use regular peanut butter)

1 egg

Directions

Pulse granola in a food processor to blend into a flour consistency.  Keep about 1/2 granola out of food processor and add in at the end- for a little texture.

Add in peanut butter and egg.  Mix.

Roll into balls and press with a fork.

 

 

Bake at 350F for 10-15 minutes depending on your oven.

  1. Are these really sweet? I have also found others that call for sugar instead of granola and I was wanting to make something that tastes similar to peanut butter delight.
